Hat Box Cake for Big Hat Themed Sweet 16 Birthday.



What we have her is a margarita cake (rich margarita cake filled with lime cheesecake), for Olivia's Sweet 16th Birthday. Since her party's them is "Big Hats" I went with hat boxes for her cake.

18th Birthday Cake



This pink, black and white 18th birthday cake was a honor to create. The birthday girl has had every birthday cake for all of her 18 years done by me. I have loyal clients but she's the first that I'm not related to that I've been honored to do this for.

Top tier:
Crรจme Brรปlรฉe...Caramel cake filled with fresh caramel & white chocolate ganache.

Bottom tier:
Decadent Chocolate...A divinely decadent chocolate cake filled with chocolate fudge & chocolate-chip mousse.

Peanut Butter Chocolate Cake


Peanut butter chocolate cake. Moist chocolate cake is layered and frosted with a rich peanut butter Swiss meringue buttercream. To make it even more decadent, it is topped with Ferrero Rocher, a dark chocolate ganache drip and peanut butter chocolate chip cookie crumbs.

I had such a hankering for peanut butter and chocolate all week that I had to do something about it. So here's the result!

Good morning! Thursday is infinitely brighter with a Green Tea, Lychee and Strawberry cake.



The beauty of this cake lies in the fact that the colors are all-natural. Green from the green tea, brilliant red from the strawberries and a pale pinkish white from the lychees.

Watercolor art on this spring-inspired wedding cake. The couple wanted a floral theme, without the sugar flowers, and this is what we came up with! I can't begin to tell you how much I enjoyed creating this piece.

Hand Painted Moroccan Wedding Cake


Hand painted Moroccan cake for one of the sweetest Moroccan couples I've ever met. Baking and decorating are truly my happy place.


Alternating tiers of:

LEMON-THYME CAKE...Lemon-thyme cake, alternates layers of lemon curd and vanilla buttercream.

and

ZESTY MEXICAN HOT CHOCOLATE CAKE...Dark-chocolate buttercream spiked with the spicy chili powder between slabs of cinnamon-vanilla cake.

Saturday Wedding Cake


The wedding's theme was bling so the couple decided on jeweled bling for their cake. It's simple and elegance.


Top tier:
Moist sour cream pound cake filled with a velvety coffee mocha cream frosted with almond amaretto buttercream.

Middle tier:
Devils food chocolate cake filled with a raspberry swirled chocolate filling frosted with Chambord-champagne buttercream.

Bottom tier:
Rich white cake filled with a tart raspberry cream, frosted with a creamy vanilla buttercream.

Weekend Wedding Cake ( 4 Jun 16 )


The wedding colors were red and white, but the cake is all white. I just shot it in black and white because it's classical and romantic. This was suppose to be a 3 tier but they couldn't narrow down just 3 flavors so they went with 5 they really loved and now they have a 5 tier cake.

Top tier:
The Retro - An update on an American classic: moist yellow cake filled with milk chocolate mousse frosted with Madagascar vanilla buttercream.

2nd tier:
Caramel Tiramisu - Espresso infused gold cake layered with caramel mascarpone with a hint of chocolate all frosted with a light rum buttercream

3rd tier:
Almond Joy -Sour cream fudge cake layered with a toasted almond coconut filling and chocolate truffle frosted with almond buttercream

4th tier:
Black and White - Dark chocolate cake filled with white chocolate mousse, accented with sliced strawberries and frosted with white chocolate buttercream.

Bottom tier:
Classic Wedding White - A classic white cake filled with fresh tart raspberries and a full bodied cream cheese buttercream and frosted with cream cheese buttercream.

Red, Black and White Wedding Cake


This cake wasn't to hard to decorate, being that I used stencil for all of the embellishments.


Top tier:
Almond genoise brushed with raspberry syrup and filled with seedless raspberry preserved and whipped white chocolate ganache

2nd tier:
White cake flavored with creme brulee CoffeeMate, brushed with vanilla flavored simple syrup, filled with fresh caramel sauce and bavarian cream

3rd tier:
Chocolate cake filled with kahlua mousse and espresso meringue

Bottom tier:
Lemon coconut cake filled with lemon curd and coconut dacquoise

Teir:
Chocolate cake filled with coconut flake filling and almond dacquoise (like an Almond Joy)


Middle Teir:
Yellow cake filled with rum-spiked vanilla pudding and fresh strawberries


Bottom Teir:

This is a very simple  yet elegant choice for any small function. It's a vanilla cake and cupcakes with my Italian buttercream frosting. Not every design has to be massive and intricate to be eye catching and appreciated.

Sweet 16 Birthday Cake


What we have here is a 3 tiered topsy turvy Sweet 16 birthday cake.  All layers are made from my chocolate cake but each tier has a different flavor of cheesecake filling it. One is a banana cheesecake, strawberry cheesecake and chocolate cheesecake. It was a tasty hit.

Elegant Weekend Wedding Cake



Details and flavor is what this wedding cake is all about. 


What you have here is alternating layers of:

Signature White Wedding Cake  
Fluffy Vanilla cake with a light Strawberry Cream filling and Fresh Strawberry Slices.

Chocolate Mocha Cake
  A coffee lover’s favorite!  Chocolate cake infused with Espresso & layered with Mocha Buttercream filling.


In doing my prep for this cake, it starts on a Monday of doing all of the sugar flowers that will be needed.


I bake the cake on Wednesday and refrigerate it until Friday when all of the elements come together to complete it.

Semi Naked Chocolate Mocha Cake





This semi naked chocolate mocha cake is rather simple for a beginner or novice who wants to make a delicious and visually appealing cake.

INGREDIENTS

Chocolate Cake:

Mocha Buttercream:
½ cup egg whites
1 cup granulated sugar
1½ cups butter (cubed, room temperature)
1 tsp vanilla
1 Tbsp instant espresso powder
3 oz dark chocolate (melted and cooled)


INSTRUCTIONS

Chocolate Cake:

Mocha Buttercream:
1. Place egg whites and sugar into the bowl of a stand mixer, whisk until combined.*
2. Place bowl over a hot water bath on the stove and whisk constantly until the mixture is no longer grainy to the touch (approx. 3mins).
3. Place bowl on your stand mixer and whisk on med-high until the meringue is stiff and cooled (the bowl is no longer warm to the touch (approx. 5-10mins).
4. Switch to paddle attachment.
5. Slowly add cubed butter and mix until smooth.
6. Add vanilla, melted chocolate, and espresso powder. Whip until smooth.**
7. Frost cake

Strawberry Chiffon - light lemon buttermilk cake filled with fresh strawberry mousse-line covered with white chocolate buttercream.

2nd tier:
Almond Mocha latte - moist sour cream pound cake filled with a velvety coffee mocha cream frosted with almond amaretto buttercream.

3rd tier:
Black and White - Dark chocolate cake filled with white chocolate mousse, accented with sliced strawberries and frosted with white chocolate buttercream.

Bottom tier:
Lemon Satin Cake - Zesty lemon cake filled with silky tart lemon mousse and frosted with Cointreau buttercream.
